Best Ways to Use Leftovers
I’m going to admit it, I’m not a big fan of eating the same meal 4 times in a row, and until the last few years, I rarely ate leftovers. That was before I got creative and I found ways to turn them into entirely new and delicious meals! It doesn’t have to be complicated, just a little thinking outside of the box is all it takes. Below I’m going to share with you a few of the best ways to use leftovers!
Leftover Meats (Grilled Chicken, Steak, Pot Roast, Pork, Etc)
For a while, my boyfriend and I were on a Pot Roast kick. I would make a big one every Sunday and we would use it for meal prep for the week. Eventually, though we started getting bored with it, so I wanted to shake things up a bit. One of my favorite creations to date was a grilled open-faced sandwich and although we used pot roast, it would work with just about any kind of leftover meat. Here’s how I made it – We had some garlic Texas toast hanging out in our freezer so I baked that up, then I sauteed up some diced onions and peppers in a pan. I added the pot roast and some of the gravy to the peppers and onions until it was heated. From there I placed the meat mixture on top of the Texas toast along with some cheese and baked it until the cheese was melted. I absolutely loved this leftover hack!
Another awesome way to use leftover meat is to throw it into a breakfast hash. Creating a hash is super simple. All you have to do is sautee up some diced potatoes, and mix in any extra fixings you like. I don’t think I’m alone here, but I always tend to have leftovers at 2 kinds of restaurants, Chinese and Mexican. It’s usually because the portions are big and they tend to involve a lot of filling carbs, like rice, noodles, beans, tortillas etc. So without further ado, these are the best ways to use leftovers from restaurants.
My favorite way to use Mexican leftovers is in omelets and frittatas. I have been known to scrape the fillings out of tacos or burrito bowls to turn them into a delicious breakfast! You can always add extra veggies if you want to as well, cook those first and then add your taco filling to heat it up, stir up a few eggs, add them in, and either cook on the stove or bake in the oven till the eggs are set and you’ve got your omelet or frittata. Of course, you should add cheese because cheese is life, and any of the traditional taco condiments you want, like pico, sour cream, and guac.
Chinese or Thai noodle dishes easily transform into delicious soups! A few weeks ago I turned my leftover Chicken Pad Woon Sen into a soup by adding chicken broth, a few splashes of soy sauce, some spicy garlic chili paste and some chopped cilantro. A nice warm soup is so comforting and is always perfect for a chilly winter night!
