In no particular order, here are some of my recent favorite things!
Martha Stewart’s Slow Cooker Cookbook
I picked up this bad boy at TJ Maxx last week for $12.99, it looks like it’s available for $17.68 here on Amazon as well. I was combing through the recipes this weekend and a lot of them sound really delicious. I had my boyfriend go through it as well and mark some of the things he wants to try so we will be working our way through it! Right now is the perfect time for hearty, cozy slow cooker meals! About half the recipes are really simple which I love, and then some do take more ingredients and more prep work but they sound like they will be worth it, so I’m up for the challenge. The first thing I made from the book was Pork Posole, which was super easy and delicious and several of my friends mentioned they’d like the recipe so here we go –
2 Tbsp Vegetable Oil
1 1/2 lb Boneless Pork Shoulder, Trimmed and Cut Into 4-inch Pieces
1 White Onion Chopped – Plus More for Serving
4 Garlic Cloves, Minced (I used 6 because I don’t believe that there’s ever too much garlic)
2 Tbsp Chili Powder
4 Cups Chicken Broth
2 Cans Hominy, Drained and Rinsed
Chopped Avocado, Sliced Radishes, Corn Chips, Lime Wedges for Serving
Britt Modification: I added quite a bit of cayenne before leaving things to cook for the 4 hours because we like it spicy in this house!
Preheat 5-6 quart slow cooker. Heat 1 Tablespoon Oil in large skillet over medium-high heat. Season pork with salt. Add pork to skillet and cook until pieces are browned on all sides, about 8 minutes. Transfer to the slow cooker. Heat remaining tablespoon oil in skillet. Add onion, garlic, and chili powder and saute until soft. Add 2 cups of broth and cook, stirring and scraping up browned bits with wooden spoon. Transfer to slow cooker. Add remain 2 cups of broth to slow cooker. (This is where I added cayenne pepper, I didn’t measure, just did about a teaspoon worth) Cover and cook on high until meat is very tender, 4 hours on high or 8 hours on low. Using 2 forks shred pork (I didn’t need 2 forks it was falling apart by itself after 4 hours) Return to stew and stir in hominy. Stir to heat through, and season to taste with salt. Serve with whatever toppings that float your boat!
Spotify Discover Weekly
My Spotify Discover Weekly playlist is my Monday Motivation. It’s something I look forward to turning on every Monday Morning to find some new, fresh music. If you don’t currently use Spotify, you should! Once you have been using the app or web browser version for a few weeks, Spotify will get to know your tastes in music and will start generating the Discover Weekly playlist for you, which is 30 new tunes that are picked by an algorithm based on music you’ve already listened to. I usually find at least one brand new jam out of the 30 that I really LOVE! My taste in music is really all over the place, but for the most part I tend to listen to indie-pop-rock stuff. I’ve listed some of my current favorites below if you’re curious:
If you were following my Instagram stories last week you would have seen that I was trying to find distractions from bored snacking! I ran an IG poll in my story and found out that something like 90% of my followers eat when they are bored too! Guys, we need more hobbies!!! I have been known to be a little bit of a DIY girl if the project seems simple enough, so I tried my hand at an ornament wreath. I have to say I think it turned out really good, but it ended up taking a lot longer than I thought it would. The reason for that was the project I based mine on used bigger ornaments and I ended up using smaller ones, so it took a lot more ornaments to cover the base of the wreath. Here’s the link to the project I based mine on. I had some twinkle lights lying around so I wrapped those around it to make it sparkle.
Also, I’ve had my eye on these wall hangings from Target for some time now and I got bored Saturday night and decided I just had to have them so I finally bought them. I’m very happy with my purchase 🙂
Second Hand Shopping
If you can’t tell by now, my two vices are food and clothing. Food-wise I do pretty well at eating healthy during the week and save the majority of my cheat meals for the weekend. Shopping wise… well I tend to buy what I want when I see it. I go through phases where I do that sometimes and my credit card is starting to wrack up. So I decided I was going to start shopping more second hand spots. I’ve talked about Poshmark before which is a great app that I use to not only buy gently used clothes, but also to sell mine. You can get great deals on things that are brand new with tags too. If you’re not on Poshmark I would definitely recommend at least browsing around before you buy something new. There’s also a local shop that recently got an app and they have been loading quite a few cute items, including a red romper that I purchased. I have mad love for rompers and this one is super cute and I think it will be great for the holidays! This local shop will ship anywhere in the country so if you’re not in Florida, it doesn’t count you out from shopping their app! You can shop from their website too, the link is here.
