Umami Bomb Black Bean Burger

Hey All!

So these are my very favorite black bean burgers. Once upon a time, I tried a vegan lifestyle change and it really made me feel awesome. It’s just soooo hard to maintain it if you’re busy and on the run a lot. Everything needs to be pre-planned because you can’t always just run through a drive-thru and find a vegan-friendly option. Anyway, these burgers were originally from the innocent delight website and are delicious. I honestly like them better than burgers made with meat because they have so much more flavor! I follow this recipe pretty closely but don’t necessarily measure all my ingredients, I guess that’s the chef in me! The one thing I do differently is add extra garlic because I always add extra garlic to everything and I also add hot sauce. Yesterday I used chili garlic sauce that you can find in the “ethnic” aisle of Publix. It’s so good and a little bit goes a long way. I hope you enjoy these burgers as much as I do 🙂

    • 2 Portobello Mushrooms (or 4 cups), chopped
    • 1/2 yellow onion , chopped
    • 2 garlic cloves , chopped
    • 1 can (15 oz) Black Beans, rinsed and dried
    • 3/4 cup Grated Parmesan Cheese
    • 2 eggs , beaten
    • 1/2 cup Breadcrumbs
    • 2 tablespoon Parsley
    • Salt and pepper
    • 1 tablespoon Worcestershire sauce (optional)
    • 1 tablespoon of mixed seasoning (optional)
    • 1 tablespoon of olive oil , and more for brushing

  1. In a sauté pan heat up the oil
  2. Add chopped onions and cook until soften, about 2 minutes
  3. Add garlic and cook for another minute
  4. Add mushrooms and cook for about 5 minutes until mushrooms are softened but all the moisture has evaporated
  5. Once mushrooms are cooked, remove from the heat and let them cool off
  6. In the meantime, rinse the black beans and spread them on the paper towel and pat them dry (you want your beans to be dry)
  7. In a large mixing bowl add the beans and using fork mash most of them, leaving some of them whole
  8. Add all the remaining ingredients and mix well
  9. Form patties and set them aside (make sure your hands are wet as the mixture will be sticky)
  10. Heat up flat griddle, brush it with olive oil
  11. Place patties on a hot griddle and cook 2-3 minutes on each side
  12. Serve with your favorite burger toppings
